I posted a recipe for grain-free white dinner rolls also known as pan de yuca a while back. We use the recipe for dinner rolls, pizza dough, and breadsticks. Since the recipe calls for egg (Tynan and I can not have egg), I had to find a different solution for this quick, bread-like side. I took out the egg, used a less expensive goat cheese, and added some cold butter... it worked perfectly! A cheesy garlic bread without eggs, grains, soy, or sugar.
The kids eat these breadsticks like candy. I made them a few nights ago and Tynan ate most of them all by himself. They have a nice buttery garlic flavor without the weight of traditional bread. They are quick and easy - a nice compliment to spaghetti and meat sauce or tomato basil soup.
Prep time: 10 minutes
Cook time: 15 minutes
Yield: 8 breadsticks

Ingredients
1 cup chevre goat cheese, plain or infused with herbs1 cup tapioca flour
1/4 teaspoon sea salt
1/4 teaspoon baking soda
1 1/2 teaspoon apple cider vinegar
2 teaspoons garlic powder
3 tablespoons butter, cold

Method
- Preheat oven to 350°F.
- In the food processor add the cheese, flour, sea salt, baking soda, apple cider vinegar, and garlic powder. Pulse until well combined.
- Add the cold butter in one tablespoons at a time. Pulse until dough forms.
- Remove dough from food processor and divide it into 8 balls with your hands. Then roll the balls into logs about 1/2 inch thick.
- Place each log on the baking sheet lined with parchment paper.
- Bake for 13 minutes. Optional - after the 13 minutes, set the oven to broil and leave the breadsticks in for 1-2 minutes, just enough time to lightly brown the top. Be sure to take them out of the oven immediately after 2 minutes, otherwise they will burn.
- Serve warm, not hot.
